INGREDIENTS
- 125g dark chocolate
- 125g butter or coconut oil
- 3 eggs
- ¾ cup Nuvia Baking
- ¼ cup coconut sugar
- ¾ cup Plain Flour
- ¼ cup Cocoa
- 1 tsp. vanilla
- 1 cup frozen cherries
- 100g dark chocolate
METHOD
- 1. Preheat the oven to 160C and line a square 8 inch x 8 inch baking tray.
- 2. Firstly, prepare the cherries. In a small saucepan add the frozen cherries with a splash of water. As the cherries begin to defrost use a fork to mash them slightly. Allow to cook for a further 2mins so that the juices can thicken. Remove the heat and set aside.
- 3. Place dark chocolate and butter in a heat proof bowl over a saucepan of water of low heat. Allow melting completely. Remove from heat and whisk in eggs, baking blend and coconut sugar.
- 4. Then add in plain flour, cocoa and vanilla until just combined. Finally stir through cherry mixture and remaining dark chocolate.
- 5. Pour into prepared baking tin and bake in the oven for 40mins. Allow to cool completely before cutting.
